Step 1: chop the ingredients.
Cut potatoes into cubes, onion into small cubes, broccoli cut into florets, garlic into thin slices.
Step 2: fry the onion.
Heat the oil in a pan and fry the onions with a small amount of salt. Cook, stirring, for 2 minutes. Add the garlic and fry it a minute.
Step 3: cook the vegetables.
Pour in the pan the broth, add the potatoes. Bring to the boil and simmer for 5 minutes (potatoes should remain firm).
Add broccoli, cumin, chilli, pepper, salt more if necessary, and cook for 4-5 minutes, until broccoli is tender.
Step 4: add cheese and cream.
Grate cheese on a grater. Add to the soup grated cheddar, cream and fresh herbs to taste. Stir, bring to the boil and simmer until cheese melts completely.
Step 5: serve the broccoli soup with cheddar.
Serve the soup hot, garnished it with grated cheddar and fresh herbs.
