Курица с марсалой и красным цикорием


Olive oil for frying
A few sprigs of thyme
1/2 head garlic, not peeled , cut crosswise
1 large chicken – cut into 8 pieces
salt and pepper
1/2 bottle of “Marsala”
A handful of roughly chopped parsley


4 heads of red chicory
Olive oil for frying
Salt, pepper


Heat the pan, add thyme and garlic , fry for 1 minute.
Season the chicken and fry for 3-4 minutes, skin side down first , then flip over and fry the same . Pour in the wine and simmer for 10-15 minutes. Then separate the chicory leaves and fry for 1-2 minutes , seasoning with salt and pepper. Put the dish on a plate, sprinkle with parsley and pour the sauce from the chicken.
