Soon will come the main long-awaited celebration – New year celebration. The feast is usually prepared a lot of delicious food, a separate place pay cuts.

- Sweet pepper, hot pepper, carrots, onions: 1 PC.

- Tomatoes in own juice: 800 g

Ivona offers to prepare for the New year an original appetizer of eggplant stuffed with vegetables in tomato sauce.
In a sense, turn out marinated eggplant, because the dish should stand for several days. To marinate the vegetables better in a few days.
This appetizer is versatile, because it can serve not only for the holiday table, but with any side dish for a regular dinner on a weekday. The only minus – high cost of fresh vegetables in the winter. But as summer vegetables need to just take 1-2 pieces, the cost of food turns out not so great.
Preparation:
- Cut eggplant into lengthwise thin slices.
- Soak in cold salted water for half an hour.
- Drain the water, spread out the eggplant on a parchment.
- Grease with vegetable oil, bake for 15 minutes at 200°C.
- Finely chop the onions and greens, and carrots grate on a coarse grater.
- Cut into strips sweet pepper and bitter, chop the garlic.
- Fry lightly the onion, add the carrots, when the vegetables become soft, add everything else.
- Season vegetable with tomato and ground spices.
- Wrap the vegetables in slices of eggplant roll, tightly put in a saucepan layers.
- Pour each eggplant with tomato sauce, spread on top of sliced tomatoes.
- Put in refrigerator for 1-2 days.
