Ingredients

Carrots (large) 5 Pieces
Onion 1 Piece
Garlic cloves3 Pieces
Coconut milk 400 Milliliters
Chicken or vegetable broth 400 Milliliters
Butter 20 Grams
Brown sugar 1 teaspoon
Salt, black pepper To taste

Method of preparation

  1. Peel the carrots and cut them into cubes, then chop the onion and mix with the carrots and garlic in a saucepan. Pour broth and add salt and black pepper to taste. Simmer 20 minutes until carrots are soft.

  2. While preparing the soup base, sauté in the pan with nuts and butter and sugar to caramelize, stirring constantly. Remove from heat and let cool.

  3. Cooked vegetables with broth, pass it through the blender to puree. Add the coconut milk and stir until smooth. Warm the soup over low heat for a couple minutes.

  4. Garnish finished soup caramelized nuts and finely chopped coriander.
