Flounder fillet – 2 PCs.
Tomatoes cherry – 300 g
Shallot – 1 PC.
Basil – beam
Parmesan cheese (grated) – 150 – 200 g
Salt, pepper – to taste
Fish wash and carefully dry. Salt, pepper and send to the frying pan preheated with olive oil. Fry for a few minutes on each side.
For the sauce: tomatoes cut in half. Grind onion and Basil. Fry all in a pan.
Meanwhile, in a blender grind the white bread, grated Parmesan and parsley.
The fish put in a baking dish. On top put tomato sauce and sprinkle bread crumb with Parmesan and parsley. Bake in a preheated 180C the oven for 5 – 10 minutes.
