1 white honeydew (better cooling)
2-3 tbsp cold tequila
finely grated zest of 1/2 lime and a little more for filing
juice of 1/2 lime
2-3 tbsp liquid honey small
pinch of sea salt finely ground
a handful of sprigs of mint
A melon cut in half, choose seeds with a spoon. A special round spoon with sharp edges to cut the flesh in neat balls and put in a deep bowl.
Mix the tequila, zest and lime juice, honey and salt in a small container. Try it; if too sour, add a little honey.
Fill with melon balls of filling of tequila, add the mint, mix gently and refrigerate for at least 10-15 minutes.
Place melon balls on a portion kremanku, pour present on the mint dressing and serve.
