Japanese soup with rich broth from pork bones and sweet delicate pork Bowl


For the broth

  • pork bones 1kg
  • water 3 l
  • green onion 6 PCs.
  • onion 1 PC.
  • ginger 1 PC.
  • garlic 8 cloves

Pork Bowl

  • pork neck (or breast) 800 g
  • water 410 ml
  • soy sauce 100 ml
  • mirin 60 ml
  • sake 60 ml
  • leeks 1 PC.
  • ginger 1 PC.
  • sugar 4 tbsp.

To assemble the ramen

  • broth
  • pork
  • eggs
  • green onions
  • egg noodles
  • the bean sprouts mash
  • soy sauce
  • fish sauce 6 tbsp.
  • sauce (pork Bowl)


  • Broth:

    Soak pork bones in cold water for 1 hour.
    After an hour drain the water, rinse the bones.
    Put into a saucepan and cover with water so that the water was above the bones of 3-5 cm.
    Put the saucepan on a high heat. Once the water boils cook for 10 minutes removing the foam.
    After 10 minutes drain the water, rinse the bones in cold water and wash the pot.
    Then put the bones in a clean pot, cover with cold water at 3-5 cm above the bones, add onion, green onion, ginger and garlic.
    Bring to a boil, reduce the heat to medium-low, cover with a lid.
    Cook for 6-12 hours, stir occasionally. (I cooked it 6 hours in the pot, then moved all into the slow cooker and left overnight in a heating mode)
    Strain the finished broth.

  • Pork Bowl:

    Pork to spin into a roll and tighten the thread.
    Fry in a very hot pan with 1 tbsp oil on all sides.
    In a saucepan add the water, sake, mirin, soy sauce, sugar, ginger and leeks.
    Put the saucepan on the fire, bring to a boil.
    Put the pork in the sauce, cover with foil, and cook for 10 minutes.
    After 10 minutes flip the meat, reduce the heat to low, cover with foil and lid.
    Cook for 2 hours, turning the pork every 15-20 minutes.
    Remove the pan from the heat and allow to cool, then put into the refrigerator for at least 6 hours (best left overnight).
    Before serving, remove all skin, chop the pork slices and fry for 30 seconds over high heat.
    The sauce from the pork strain, we will need it for the broth.

  • Ramen:
    In bone broth add fish sauce and half of the sauce from the pork bowl, mix well.

    For ramen:
    Boil soybean sprouts in boiling water for 1 minute, then rinse in cold water.
    Boil noodles and rinse it under cold water.
    Finely chop the green onion, cut the egg in half.

  • Build:
    In a large bowl, put the noodles, lay on top of a Bowl of pork, soybean sprouts, egg.
    Pour over the broth, sprinkle green onions, add soy sauce to taste.
