Step 1: prepare the Apple filling.
Apples peel, remove the seeds and cut the flesh into small cubes of the same size. In a skillet or pan melt the butter and add the apples. Cover and simmer until soft, until a mushy consistency. Cool.
Step 2: prepare the shortbread dough.
Sift the flour through a sieve. Add the egg yolks, icing sugar and chopped butter, at room temperature. Mix until a smooth, homogeneous texture. Knead it into a ball, wrap with film and leave in fridge for 20 minutes.
Preheat the oven to 180 degrees. Knead chilled dough and place it into the form (the thickness of the dough should be about 0,5 cm). Prick with fork and bake until Golden brown.
Step 3: whisk the egg whites.
Whip the egg whites, gradually adding portions of sugar. Whisk to obtain a glossy stable foam.
Step 4: bake the perfect Apple pie.
On baked dough put the Apple filling, and on top of the beaten egg whites. Flatten to cake looked beautiful.
Bake at 170 degrees (in preheated oven) until until the meringue will not become a rosy color.
Step 5: serve the perfect Apple pie.
Serve slightly cooled. Very tasty, really a perfect Apple pie.
Store in the refrigerator.
