Step 1: cook meat.
Meat and chicken gizzards, rinse, put in pot, cover with hot water, add salt, pepper and put on fire. Bring to a boil, remove the foam and cook under the lid until the meat is tender.
Remove the meat from the broth and cut into strips or cubes.
Step 2: add the potatoes.
Peel potatoes, cut into cubes and put in pot with broth.
Step 3: add the onions.
Cut onions into cubes and fry in oil for 5-10 minutes, until the pieces become translucent and soft.
Send fried onions into the broth.
Step 4: add sausage and bacon.
Slice the brisket and sausage slices of medium size.
Saute bacon and sausage in the same pan where you fried the onions until Golden brown, then add the broth.
Step 5: add the meat.
Add to the soup previously cooked meat and Bay leaves.
Step 6: add the tomato.
Add tomato paste, if you need more salt and pepper, stir and simmer until the potatoes are soft.
Step 7: add the cucumbers.
Slice cucumbers, add to the soup, after them, add the olives, mix the salt and immediately remove from the heat.
Step 8: serve the stew with potatoes.
Serve soup with lemon, sour cream and fresh greens. And definitely hot!
