4 pork loin chops with bone, about 250 -300 g
1/2 to 1 teaspoon chili powder
1 teaspoon sweet paprika
Sea salt and black pepper
2 tablespoons olive oil
A few sprigs of thyme
4 garlic cloves
From 5 to 6 star anise
1 teaspoon of coriander seeds
3 large sweet potatoes
1 red chili
Bunch fresh cilantro
Marinate pork in mixture of chili powder, paprika, coriander seeds, stars anise, thyme, garlic, olive oil, salt and pepper
In a pan pour olive oil, saute the pork chops (to give the chops color on all sides and place in oven for 8-10 minutes at 200 degrees)
Boil chicken broth, boil sweet potatoes and drain.
In hot pan pour olive oil, put the shallots, garlic, season with salt and pepper
Add the sweet potato and crushed
Add the fresh coriander and sage leaves.
In serving dish put sweet potatoes on top of pork. You can optionally garnish with arugula.
