Финиковый пудинг с карамельным соусом


200 g flour
75 g suet
75 g walnut
175 g pitted dates
zest of 1 orange
3 tablespoons brown sugar
1 tbsp molasses
1 egg
200 ml of milk
butter for greasing

FOR the sauce

100 g butter
75 g brown sugar
75 g syrup
pinch coarse sea salt
seeds from 1 vanilla pod
300 ml cream


Sift flour , add fat . Grate the orange zest . Add the brown sugar and molasses. Mix the egg with the milk and lightly whisk . Then, the resulting mixture beat in the flour , stirring constantly. Cut the dates into 3 pieces, finely chop the nuts and add to flour. Form grease with oil , pour the batter into the pan , top cover with a parchment paper, and tightly banded. cover with foil and cook in a saucepan with boiling water . Pudding steamed on slow heat for 2 – 2.5 hours. Periodically add water. While the pudding is cooked – prepare the caramel sauce .
Put the butter, sugar, syrup, salt and vanilla seeds in a small pan. On medium heat bring to a boil , pour in the cream and cook until the sauce thickens.
